Chocolate Berry Floral Jumbo Cupcakes

Описание: Spring is on the way and I have my spring fever to do my floral spray cupcakes. These beauties are a dark chocolate jumbo cupcake with a mixed berry filling and buttercream
I am making some up ahead to have ready for my Grandma's birthday next month, my parents head up before her birthday if schedule allows so im ready for it. These can freeze beautifully too if well wrapped, I do it frequently to get them done when I have time.

Chocolate Cupcakes:
3/4 cup flour
1/2 cup cocoa powder
1 teaspoon instant espresso powder
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup brown sugar
1/2 cup sugar
1/3 cup oil
1 teaspoon vanilla
1/2 cup buttermilk

350°F , for 18-20 minutes


Berry Filling:
1 lb frozen berries
1/2 cup sugar
1 Tablespoon lemon juice
1 Tablespoons water
2 Tablespoons cornstarch

Buttercream:
Buttercream is all by eyeball for me, but you only need
Butter (salted always)
Powdered Sugar
Vanilla Bean Paste
Almond Extract
