French Roast Chicken 🔥🍗🐔
Ingredients:
1 Whole, Roasting Chicken
1 Bouquet de Garni - Thyme, Roseary, Savory, Basil
48 Ounces, Clarified Butter
1 Cup, Whole Garlic
4 - 6 Lemons, halved
4 - 6 Oranges, halved
Salt, White Pepper, Paprika, Onion & Garlic powder, To Taste
Directions:
1. Pre-heat your oven to 500°F
2. In a pan, cover your whole roasting chicken with clarified butter.
Olive oil can also be added for additional surface coverage if needed.
2. Season your entire chicken generously with Salt, white pepper, paprika, garlic, and onion powder. Inside & out.
3. Once seasoned, stuff your roasted chicken with the Boquet and Citrus until the cavity is full. Any additional stuffings that do not fit can be placed in the pan along with the chicken.
4. Hard sear the outside of your chicken at 500°F for 15 - 20 minutes maximum.
5. Remove your chicken from the oven and drop the temperature to 400°C.
6. With a Large spoon or ladel, baste your chicken for a minimum of 5 minutes. This will allow for extra flavor and moisture to be locked inside of the chicken.
7. Return your chicken to the oven at 400°C for an additional 20 Minutes.
8. Repeat Steps 6 & 7.
9. Remove your chicken from the oven, and give it one final baste before letting it rest for atleast 10 minutes to allow all moisture and juices to be sealed inside the chicken.
10. Breakdown your chicken, enjoy and reserve however you see fit! 👨🍳🖤🐏🌹
