🗝️ Coconut Chocolate Banana Smoothies
1 1/2 cups unsweetened vanilla almond milk
1 frozen banana
1 avocado
large spoon almond butter
1 scoop vanilla protein powder
1/4 cup shredded coconut
1 Tbs unsweetened cocoa powder
1 cup plain Greek yogurt

Blend all ingredients in a blender. Enjoy! Makes 3 8 oz smoothies.

🗝️ Veggie and Cheese Quiche
1 deep-dish pie crust
½ cup butter
1 red onion, chopped
3 cloves garlic, chopped
1 bag spinach
8 oz sliced mushrooms
Handful chopped parsley
1 large tomato, sliced
6 oz Garlic & Herb Boursin cheese, crumbled
8 oz shredded mozzarella
3 eggs
1 cup milk
Salt and pepper to taste

Preheat the oven to 375 F. Melt butter in a large pot over medium heat. Add onion and garlic. Sauté for 5 minutes. Add spinach and mushrooms and allow to cook down. Add cheeses. Stir. Remove from heat. To make the custard, crack three eggs into a bowl. Add milk, salt and pepper. Whisk. Roll out a pie crust in a deep-dish pie pan. Pour veggie and cheese mixture on top. Pour egg custard on top of that. Lay sliced tomatoes on top and sprinkle parsley and a bit more shredded mozzarella. Bake for one hour or until golden brown and fully cooked.
