This classic Filipino leche flan is extra rich, smooth, and creamy, made with a generous amount of egg yolks for a deep, velvety texture. Using a simple combination of condensed milk, evaporated milk, and fresh eggs, this traditional dessert is steamed in a caramel-lined mold to achieve its signature silky finish. Perfect for holidays, celebrations, or whenever you’re craving an authentic Filipino sweet treat.
Bonus: I also included a simpler leche flan–style version that doesn’t require steaming or baking, giving you an easier alternative depending on your time, tools, or preference.
Classic Style
8 pcs egg yolks
1 pc whole egg
1 big can condensed milk
1/2 cup evaporated milk
1 tsp lemon zest
For Caramel -
1/2 cup white sugar
3 tbsp water
Caramelize for 5 minutes
Steam flan between 30 to 40 minutes
or You can steam bake it at 170 F for 40 minutes
Steam bake means - you place hot water in.a pan, place the flan at the center with the hot water coming up to at least 75%. Cover the flan with aluminum foil.
Rest and chill before slicing.
No Bake No Steam Leche Flan
Same procedure for the caramel above
before pouring the batter below.
5 yolks
3 whole eggs
1 cup white sugar (as needed)
1 tsp Vanilla
3 cups fresh milk
dissolve 2 envelopes of gelatin powder in 1/4 cup water
Chill for 6 hours in the refrigerator
