Arbi ke Patton ka Pathod Recipe
Ingredients:
Colocasia (Arbi) leaves – 6 to 8 (big ones)
Gram flour (besan) – 1 cup
green chili powder – 5
Turmeric powder – ¼ tsp
Coriander powder – 1 tsp
Salt – to taste
Ginger-garlic paste – 1 tsp (optional)
Oil – for frying
Method:
1. Prepare the leaves:
Wash the colocasia leaves and pat them dry. Trim off the thick veins from the back of each leaf carefully with a knife.
2. Make the batter:
In a bowl, mix gram flour with all the spices,and add little water to make a thick paste.
3. Layer the leaves:
Take one leaf, spread a thin layer of the gram flour paste over it.
Place another leaf on top and repeat the process for 3–4 leaves.
Roll the layered leaves tightly into a log.
4. Steam the rolls:
Steam the rolls in a steamer for 15–20 minutes.
(You can also use an idli cooker or a covered pan if a steamer is not available.)
5. Cool and slice:
Once steamed, let the rolls cool completely, then cut them into ½-inch thick slices.
6. Fry:
Heat oil in a pan and shallow or deep-fry the slices until golden brown and crisp on both sides.
Serving
Serve hot with green chutney or tamarind chutney.
You can also enjoy them as a tea-time snack or side dish with a meal
