Ingredients
For the daal:
1 cup yellow moong daal (or toor/arhar daal)
½ tsp turmeric powder
Salt to taste
3 cups water
For the tadka (tempering):
2 tbsp ghee or oil
1 tsp cumin seeds
3–4 garlic cloves, sliced or crushed
2 dry red chilies (optional)
1 small onion, finely chopped (optional)
1 small tomato, finely chopped
1–2 green chilies, slit
½ tsp red chili powder
A pinch of asafoetida (hing)
Fresh coriander leaves, chopped
🥣 Method
Cook the daal
Wash the daal thoroughly.
In a pot or pressure cooker, add daal, water, turmeric, and salt.
Cook until soft and mushy (2–3 whistles in a cooker, or about 20 minutes simmering in a pot).
Mash lightly with the back of a spoon for a smooth texture.
Prepare the tadka
Heat ghee/oil in a small pan.
Add cumin seeds, let them splutter.
Add garlic and fry until golden.
Add onion (if using) and sauté till light brown.
Stir in tomatoes, green chilies, and cook till soft.
Add red chili powder, hing, and dry red chilies.
Combine
Pour this sizzling tadka over the cooked daal.
Mix well and garnish with fresh coriander leaves.
