Adapting the *Beef Bourguignon* recipe from Julia Child's book Mastering the Art of French Cooking is an exciting culinary adventure! 🧑🍳 We tried it in all possible ways and loved the *Pressure Cooker* adaptation more than the Slow Cooker, Stove Top, or Traditional Method. It’s much faster than any other way of making Beef Bourguignon. ⏱️

🍽️ Beef Bourguignon in Instant Pot | Julia Child Recipe
**Description**:
Experience the *rich, hearty flavors* of France 🇫🇷 with this **Instant Pot Beef Bourguignon**, inspired by Julia Child’s iconic recipe. Tender chunks of beef 🥩 are simmered in a robust red wine sauce 🍷, infused with aromatic herbs, vegetables, and mushrooms 🍄. This simplified version lets you enjoy full, mouthwatering flavor in a fraction of the time, thanks to the Instant Pot. 🤩

Ingredients 🧄🥕:
🍈 1 tbsp extra-virgin olive oil
🥩 3 lbs beef brisket
🧄 6 cloves garlic
🧂 1 tsp salt
⚫ ½ tsp ground black pepper
🌾 2 tbsp flour
🧅 12 small pearl onions
🍷 3 cups red wine
🥣 1 cup beef stock
🍅 2 tbsp tomato paste
🌿 ½ tsp fresh thyme
🍃 2 bay leaves
🍄 1 lb fresh mushrooms
🧈 4 tbsp butter (2 for making the sauce, 2 for frying mushrooms)

Instructions 🥘:
🍷 *Instant Pot Beef Bourguignon Recipe* 🍄
1. *Set the Instant Pot* to *Sauté* function, then pour olive oil 🫒 into the pot.
2. *Rinse the beef* 🥩 and dry it off with paper towels. Sear the beef in batches until browned on all sides 🔥.
3. Add red wine 🍷 to the Instant Pot. Since this is *Beef Bourguignon**, it's best to use a **Burgundy red wine* made from *Pinot Noir* grapes 🍇. The red wine will help you *deglaze* the bottom. As Julia Child says, the glaze is a "treasure of cooking"! 💎
4. Add beef stock 🥣 until the beef is barely covered. Then, stir in tomato paste 🍅.
5. Season with thyme 🌿, bay leaves 🌿, minced garlic 🧄, and salt 🧂.
6. *Cancel* the Sauté program, close the lid, and turn the steam release handle to the "Sealing" position 🔒.
7. Select the *Pressure Cook* program, set it to high pressure, and manually adjust the time to *40 minutes* ⏲️.
8. Set the "Keep Warm" button off. While the beef cooks, let's prepare our buttered mushrooms 🍄.
9. *Rinse the mushrooms* thoroughly, then heat butter 🧈 in a skillet over medium heat. Add the mushrooms 🍄 and cook for about **6 minutes**, stirring occasionally to coat them in the butter. Don’t overload the pan, and remember that perfectly sautéed mushrooms shouldn’t have any juice! Set them aside when done.
10. When the time is up, use the *Quick Release* method to open the lid. Turn the steam release handle to the "Venting" position 💨, open the lid, and add pearl onions 🧅 and the buttered mushrooms 🍄. Mix well, then close the lid and set the steam release handle to the "Sealing" position 🔒.
11. Select the *Pressure Cook* program again, set it to high pressure, and manually adjust the time to *5 minutes* ⏲️.
12. Turn off the "Keep Warm" button. When the time is up, use Quick Release again, open the lid, and cancel the pressure cook program.
13. Select *Sauté* and set it to *5 minutes* ⏲️.
14. *Mix room-temperature butter* 🧈 with flour 🍚 until smooth, then add it into the Instant Pot. Stir occasionally until the sauce thickens.
15. Remove the bay leaves 🌿, and add ground black pepper 🧂 and extra salt if needed.
