Gael is weak against frost and poison. Getting in five hits in a short time triggers them. Irithyl Rapier has a built in frost effect and it is a good dps weapon for stamina control during phase one. I change for the Sellsword Twinblades for phase 2 and 3 because they have long moments when I can't hit the boss so burst damage performs better than dps.
Phase one:
All about stamina control and how to stay near the boss safely. Gael's mid and long range attacks usually are not the problem. Players have to learn the close range attacks so they don't trade damage every time they attack the boss. When you are very close to Gael, he either takes a side step to your left and attacks with combos (that he can cancel), or he stays still and attacks once. First you should learn the difference between THE single swing (00:24) and a single swing that is part of a combo he canceled (00:30). When you learn that, you know when you can attack and when you should not because Gael could still continue.
Other than that, make sure you always leave some stamina after you attack and you will eventually learn the first phase.
Phase two.
His cape becomes the extension of his blade so Gael's attacks have a long lingering hit box. Dodging becomes very precise.
Vertical smashes and thrusts have a poor horizontal tracking so if you are near the boss, you can simply run or even walk right to avoid them. Smashes usually have follow ups and thrusts only when you are in front of the boss. Attack after follow ups or when you are at the side of Gael after he thrusts.
Horizontal swings are difficult to dodge. When close to Gael, always roll towards the attack. If there is little room between you two, safest thing to do is to roll away from him and wait if he finishes two slashes with a highly punishable thrust.
If he uses the repeating crossbow, either roll spam southwest or southeast, or run right/left.
Phase three.
STAY CLOSE but don't try to hug him! You will avoid the dangerous long range attacks. He usually does three attack combos. Thrust openings are still the best. A good opening is also when he jump smashes Abyss Watcher style and without homing skulls (04:16). If you see the homing skulls, he will dash back after the jump smash and do a long range jump swing which is also a good opening (04:58).
