This is a rare, traditional-style Goan chicken gravy, perfect for those who want a lighter, yet incredibly satisfying and spicy non-veg meal. We achieve that signature depth and incredible richness purely through the perfect preparation and blending of our homemade Goan spices and aromatics.

INGREDIENTS
Chicken 🐓
Chicken – 500 gms (cleaned and thoroughly washed)
Green Paste
Oil – 2 tbsp
Garlic cloves – 10 to 12 (small size)
Ginger – ½ inch
Green chilli – 1 (less spicy)
Fresh coriander leaves – ½ cup
Water – as required
Masala for Marination of Chicken
Salt – to taste
Turmeric powder – ¼ tbsp
Red chilli powder – ½ tbsp
Dry coriander powder – 1 tbsp
Cumin powder – ½ tbsp
Lemon juice – ½ lemon
Chicken Gravy
Oil – 5 to 6 tbsp
Finely chopped ginger-garlic – 1 tbsp
Green chillies – 2 (less spicy)
Chopped onions – 2 large
Chopped tomato – 1 large
Chicken masala – 1 tbsp
Kasuri methi – 1 tbsp
Finely chopped fresh coriander leaves
METHOD / PREPARATION
Step 1: Green Paste
Heat oil in a pan. Add ginger, garlic cloves, and green chilli, and roast until the raw aroma disappears and they turn light golden. Add fresh coriander leaves and sauté for 6 to 7 minutes on a low flame. Allow it to cool, then transfer it to a grinder jar. Add the required water (a little at a time) and grind into a fine, smooth paste.
Step 2: Marinate the Chicken
Add all the marination ingredients to the cleaned chicken. Mix well and marinate for at least 2 hours.
Step 3: Chicken Gravy
Heat oil in a pan. Add finely chopped ginger-garlic and sauté until the raw aroma disappears. Add green chillies and fresh coriander leaves and sauté for 5 to 6 minutes on a low flame. Add chopped onions and sauté until soft and light golden. Add the marinated chicken and mix well on low heat for 6 to 7 minutes. Cover and cook until water is released from the chicken. Cook for 10 to 12 minutes.
Add chopped tomato and mix well. Cover and cook until both the chicken and tomatoes are cooked. After 10 minutes, open the lid and add chicken masala powder. Mix well, then add ½ cup of warm water and mix again. Cover and cook the chicken properly, stirring occasionally.
Once the chicken is cooked, add Kasuri methi and finely chopped fresh coriander leaves. Stir for a minute and switch off the heat. Serve hot.
Serving
Serve with steamed rice or bread.
