For Baati (Crispy Wheat Dumplings):
200 gms whole wheat flour
50 gms semolina (rava)
½ cup ghee (for dough & brushing)
Salt to taste
Warm water (as needed)
For Dal (Lentil Mix):
20 gms toor dal (pigeon pea lentils)
20 grams chana dal (Bengal gram)
20 gms moong dal (yellow lentils)
20 gms Urad dal
20 gms Masoor dal
1 chopped onion
1/2 tomato chopped
few chopped ginger-garlic
2-3 green chilies
1 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin seeds
2 tbsp ghee
For Churma (Sweet Crumbly Dessert):
2 baatis
½ cup ghee
½ cup powdered jaggery or sugar
2 tbsp chopped nuts (almonds, cashews, pistachios)
½ tsp cardamom powder
👨🍳 Step-by-Step Recipe:
1️⃣ Make the Baati:
Mix wheat flour, semolina, salt, baking powder, and ghee.
Add warm water gradually to form a stiff dough.
Shape into small balls and bake at 180°C for 25-30 minutes until golden brown or fry for 5 mins and heat under flames for 4 mins each side
Brush with ghee for extra flavor.
2️⃣ Prepare the Dal:
Cook the mixed dals with water, turmeric, and salt until soft.
In a pan, heat ghee, add cumin, onions, and ginger-garlic paste.
Stir in tomatoes and dry spices, then mix with cooked dal.
Simmer for 10 minutes and garnish with coriander.
3️⃣ Make the Churma:
Crumble some baked Baati into a coarse powder.
Roast in ghee with semolina, nuts, and cardamom.
Mix with jaggery/sugar and serve warm.
4️⃣ Assemble & Serve:
Crush the Baati slightly, pour hot Dal over it, and enjoy with sweet Churma!
