In this video I will show you how to cook Königsberger Klopse. This traditional dish originating from the eastern Prussian city of Königsberg is true treasure of old German cuisine. While it may look unusual at first, its signature taste will burn itself into your memory.

Join Knobi Cooks in the cooking action, as I show you how to prepare Königsberger Klopse step-by-step. Here is what you will need:
1500g (~3.30 lbs) waxy potatoes
800g (~1.76 lbs) ground beef
200g (~0.44 lbs) cream
60g (~0.13 lbs) capers
2 eggs
1 large onion
juice of 1 lemon
some breadcrumbs
some flour
some water
some (clarified) butter
salt
pepper
vegetable broth or beef stock
parsley
allspice
laurel leaves
1 large pan, 2 pots, 1 large bowl
about 55 to 70 minutes time.
Brief recipe summary:
1. Prepare the broth in the large pan using vegetable broth, allspice, pepper and laurel leaves.
2. Set up some water for boiling potatoes.
3. Half you onion and dice it, but one half in a pot with clarified butter and the other half into a bowl.
4. Peel your potatoes, cut them into equally sized pieces and put them into the pot with boiling water.
5. Prepare the meat balls by adding the beef, eggs, breadcrumbs, salt, pepper and parsley into the bowl. Knead all ingredients into a "dough" and form large meatballs from the mass.
6. Put the meatballs into the broth and cook them. Take care that the broth is not boiling.
7. After 15 to 20 minutes, reduce the heat on your meatballs and let them sleep in the broth.
8. Create an onion roux with the other half onion and some flour. Add a good bunch of broth to the roux.
9. Add cream, lemon juice, capers and parsley into the sauce. Taste the sauce and if necessary add some salt and pepper.
10. Drain of the potato water, add butter and parsley to the potatoes and mix.
11. Serve and enjoy!
