Belen Tava
Ingredients:
500 grams of lamb (I used lamb, but you can also use tender beef for sautéing if you prefer)
15 small onions or 2 regular onions
1 red bell pepper
3 green peppers
4-5 cloves of garlic
2 tomatoes (peeled)
For the sauce:
Half a small cup of vegetable oil
1 teaspoon of tomato paste
1 teaspoon of pepper paste
1 teaspoon of red pepper powder
1 teaspoon of oregano
1 teaspoon of black pepper
1 teaspoon of chili flakes
1 teaspoon of salt
2 tablespoons of butter (for topping)
Half a small cup of water
2 bay leaves
Instructions:
1. Place the cubed meat into a baking tray or dish. Add all the vegetables on top of the meat.
2. Add vegetable oil, tomato and pepper paste, spices, and water.
3. Put pieces of butter on top of the meat , then place the bay leaves.
4. Cover the tray with wet and squeezed parchment paper.
5. Bake in a preheated oven at 200°C for one hour. Check the meat to see if it’s cooked; if needed, extend the cooking time. Remove from the oven, uncover, and cook for another 10-12 minutes.
6. You can serve it with pita bread or alongside rice.
If you are using beef and aren’t sure if it will be tender, you might want to extend the cooking time with the tray covered. Alternatively, you can pre-cook the meat.
Mini Pide (6 pieces)
Ingredients:
450 ml warm water
21 grams of fresh yeast
1 teaspoon of sugar
700 grams of flour
1.5 teaspoons of salt
2 tablespoons of olive oil
For the topping:
2.5 tablespoons of yogurt
1 egg yolk
1 teaspoon of molasses
Instructions:
1. Mix warm water, yeast, and sugar in a bowl. Add 2-3 tablespoons of flour, cover the bowl, and let it rest for 15 minutes.
2. Add the remaining flour and salt, and knead the dough. Finally, add olive oil, knead until smooth, cover the dough, and let it rise for 1 hour.
3. Divide the dough into 7 equal pieces on a lightly floured surface and place them on a tray lined with parchment paper. Cover and let them rest for another 30 minutes.
4. Mix yogurt, egg yolk, and molasses together.
5. Brush the rested dough with the yogurt mixture as shown in the video, then shape it into pide by stretching the edges.
6. Bake in a preheated oven at 220°C for about 20 minutes, checking regularly.
