Make your weekend extra special with this Bhaaji Gosht – a delicious green mutton recipe cooked with spinach, methi and dill leaves, slow-cooked to perfection for deep, earthy flavours.
📝 Ingredients
• ½ kg mutton
• 2 bunches spinach (palak), finely chopped
• 1 bunch methi leaves, chopped
• 1 bunch dill leaves (shepu/suva bhaji), chopped
• 1 large onion, finely sliced
• 4 green chillies, chopped
• ½ cup curd
• Salt to taste
• 1 tbsp coriander powder
• ½ tsp turmeric powder
• 1 tbsp red chilli powder
• 1 tsp garam masala
• 1 tbsp ginger garlic paste
• 1 tsp cumin seeds (zeera)
• 1 tbsp oil

👩🍳 Method
1. Heat oil in a pressure cooker. Add zeera and let it splutter.
2. Add sliced onions and sauté until golden brown.
3. Add mutton and sauté on high flame until the meat changes colour.
4. Add ginger garlic paste and cook until the raw smell disappears.
5. Add turmeric, red chilli powder, coriander powder and salt. Mix well.
6. Pour in 1 cup water, mix and close the cooker lid.
7. Pressure cook for 3–4 whistles or until mutton is 90% cooked.
8. Once pressure releases, transfer the mutton to a wide pan.
9. Add chopped spinach, methi and dill leaves. Cook on low flame — greens will release water and reduce in volume.
10. Continue cooking until all excess moisture evaporates and the dish turns slightly dry.
11. Add garam masala, mix well and switch off the flame.
👉 Serve hot with paratha, chapati or rice. Adjust gravy as per preference.
