3 1/2 c AP flour
1/2 to 3/4 c icing sugar
3 yolks
1 lbs unsalted butter
1 tsp of vanilla essence
Additional
1 - 1 1/2 tsp sea salt
1 c grated Irish old cheddar cheese
Yolk for brushing
Extra grated cheese for topping
