Today I’m sharing with you a soft and fruity Summer Apricot Cake — and yes, it’s packed with real apricots both inside and on top! 🍑☀️
With simple ingredients and a beautiful look, this cake is perfect for summer afternoons. Let’s bake it together!
🧁 INGREDIENTS:
2 eggs
2 tbsp butter (melted)
1 cup sugar
1 cup milk
1 packet vanilla
1 packet baking powder
2 to 2.5 cups flour
6–8 fresh apricots
You can watch all the steps in the video, but some main points are mentioned in 👩🍳 Baker's Note:
1) Add flour carefully (start with 2 cups and add more if needed).
2) You have two options:
a) Chop 4 apricots into small cubes and fold into the batter.
b) Or, place all halved apricots directly on top of the batter.
3) Bake at 180°C (350°F) for 40–45 minutes. Check with a toothpick — it should come out clean.
4) If your apricots are very juicy, lightly coat the chopped pieces with flour before mixing them into the batter — this helps prevent them from sinking to the bottom during baking.
5) For extra shine, brush the cake with a little apricot jam after baking!
