Easy and quick to make. This is such a simple dish and packed with flavour. This can be eaten with rice, roti or bread.
It's vegan, gluten-free and high in protein.
Ingredients
• 1 cup dhal (lentils, parippu)
• 2 tablespoons oil
• 1 teaspoon mustard seeds
• ¼ teaspoon fenugreek seeds
• 1 dried red chilli
• 3cm piece pandan leaf (optional)
• 1 medium onion, chopped
• 3 garlic cloves, chopped
• 1 curry leaves sprig
• 1 teaspoon turmeric
• 2 cups water
• 1 cup coconut milk
• Salt to taste
Method
• Wash the dhal/lentils thoroughly. Drain the dhal/lentils in a fine-mesh strainer.
• Chop onion and garlic.
• Heat oil in a large pan over medium-low heat.
• Add mustard seeds. Once they start to splatter, add fenugreek seeds, dried red chilli and pandan leaf.
• Add chopped onion and cook until translucent.
• Add chopped garlic and curry leaves. Cook for a minute.
• Add turmeric and cook for 30 seconds.
• Add water, followed by lentils. Cover and cook until the lentils have absorbed most of the liquid. This will take about 15-20 minutes.
• Add coconut milk followed by salt. Give it a mix.
• Cover and simmer over low heat for a further 5 minutes.

Note:
I used red lentils for this recipe. You can use any type of lentils you have in the pantry.
