Lavender-Infused Honey & Thyme Panna Cotta
This elegant dessert combines the subtle floral notes of lavender with the earthy aroma of fresh thyme. It's a no-bake, make-ahead dish that looks beautiful in a small glass jar or ramekin.

Ingredients
• 1½ cups heavy cream
• ½ cup whole milk
• ¼ cup honey
• 1 tablespoon dried culinary lavender
• 4-5 sprigs of fresh thyme, plus more for garnish
• 1 teaspoon vanilla extract
• 2 teaspoons unflavored powdered gelatin
• 2 tablespoons cold water
Instructions
• Infuse the Cream: In a small saucepan, combine the heavy cream, whole milk, honey, dried lavender, and fresh thyme sprigs. Heat the mixture over medium-low heat until it's gently simmering, stirring occasionally. Do not let it boil.
• Strain and Steep: Remove the saucepan from the heat. Let the mixture steep for about 15 minutes to allow the flavors to fully infuse. Afterward, pour the mixture through a fine-mesh sieve into a clean bowl to remove the lavender and thyme.
• Bloom the Gelatin: While the cream is steeping, in a small bowl, sprinkle the powdered gelatin over the cold water. Let it sit for 5 minutes until it becomes thick and spongy. This is called "blooming" the gelatin.
• Dissolve the Gelatin: Gently reheat the strained cream mixture over low heat. Add the bloomed gelatin and whisk continuously until it's completely dissolved. Stir in the vanilla extract.
• Pour and Chill: Carefully pour the panna cotta mixture into your serving dishes (small jars, glasses, or ramekins). Cover each dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until they are firm and set.
• Garnish and Serve: To serve, you can dip the bottom of the dish in warm water for a few seconds to help it release, then invert it onto a plate. Alternatively, you can serve it directly in the dish. Garnish with a fresh sprig of thyme and a drizzle of extra honey.
