Описание: Sweet potato chocolate cake with healthy frosting

Ingredients :
For the cake:
Sweet Potato : 2 Cups
Large Eggs - 2 nos
Cacao Powder - 3/4 Cup
Coconut sugar -1/2 Cup
Coconut oil - 1/2 Cup
Coconut flour - 1/4 Cup
Maple Syrup - 1/2 Cup
Baking powder - 2 Tsps
Vanilla Extract -1 Tbsp

For the Frosting:
Sweet potato cooked - 1.5 Cup
Avocado - 1/2 Cup
Cacao Powder - 1/2 Cup
Dates - 1 Cup
Vanilla Extract -1 tsp

Method:
In a food processor, add raw and peeled sweet potato. Grind them into tiny pieces. Then to it add eggs. Then add coconut oil, coconut flour, coconut sugar, maple syrup, vanilla extract. Blend them all well into cake batter consistency. Pour the batter into a greased cake pan. I have used 2 cake pans lined with parchment paper. Bake for 30 mins at 350 F.

Once baked remove from oven. Insert a fork to check for doneness. Fork should come clean. Cool the cake completely. Refrigerate the cake for at least an hour.

In the mean time prepare the frosting. Add all the ingredients under frosting into a food processor and grind them well into frosting consistency.

Remove the cake from the fridge and remove the cake from the pan. Start applying the frosting on one cake and top it off with the other cake. Frost the cake fully as shown in the video. Decorate the cake as per your taste. I have used rainbow sprinkles.

Note :
1. Measurements of all the ingredients should be perfect.
2. You can use any oil for this recipe. Usually I use coconut oil for making this cake. But for this video I have used Olive oil.
3. Cacao powder is best. They are highly recommended than cocoa powder because of their health benefits.
