INGREDIENTS:
1 sheet (7 1/2 oz.) readymade puff pastry
8 oz. cream cheese
3 tbsp. sugar
1 tsp. vanilla extract
1 tsp. grated lemon zest
1/4 cup apricot preserves
1 can (15 oz.) sliced peaches in natural juice, drained, plus 2 tbsp. juice reserved
1/2 pint strawberries, hulled and halved
EASY STEP-BY-STEP INSTRUCTIONS:
1. Preheat oven to 425°F. Roll the pastry on a lightly floured surface and press into a 10-inch fluted tart pan with a removable bottom. Trim off the excess and prick the base. Chill for 30 minutes. Bake the pastry until golden, about 20 minutes. Let cool in pan.
2. Meanwhile, place the cream cheese, sugar, vanilla and lemon zest in a bowl and mix until smooth. Set aside.
3. Gently heat the preserves with the reserved peach juice in a small saucepan, stirring constantly, until melted. Simmer for 1 minute longer. Strain and let cool. Remove the cooled pastry from the pan and spread the cheese mixture on the top using the back of a spoon.
4. Top with the peach slices and strawberries. Brush with the apricot glaze. Chill at least 30 minutes
