Moist Buttermilk Cornbread
Ingredients
2 cups cornmeal
2 cups all-purpose flour
⅔ cup sugar
2 tbsp baking powder
1 tsp baking soda
1 tsp salt
2 cups buttermilk
4 large eggs
1 cup melted butter (or oil)
4 tbsp honey or maple syrup
Honey Butter Finish
4 tbsp butter, melted
3–4 tbsp honey
Instructions
Preheat oven to 180°C (350°F). Grease or line a large baking dish.
In a large bowl, mix cornmeal, flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk buttermilk, eggs, melted butter, and honey.
Combine wet and dry ingredients — do not overmix.
Pour batter into the dish
Bake for 30–35 minutes, until golden and a toothpick comes out clean.
Remove from oven and poke holes all over the cornbread using a skewer or fork.
Mix some melted butter and honey, then brush generously over the warm cornbread so it soaks in.
Allow to cool before slicing.
