INGREDIENTS FOR HYDERABADI MUTTON MARAGH
1. Mutton 1kg.
2.onions half kg (according to your taste)
3.spices - black pepper seeds, caraway seeds, cubeb seeds, cloves, cinnamon sticks, green cardamom half tea spoon or 1 teaspoon according to your taste.
4. salt,turmeric powder, black pepper powder according to your taste.
5. green chillies 3/4, mint leaves coriander leaves 🍃 according to your taste.
6. Dry fruits(handful) - almonds, cashews,walnuts, pistachios
7.oil, pressure cooker
8. water 6-7 glasses
PROCEDURE FOR HYDERABADI MUTTON MARAGH
1.Take pressure cooker pour some oil to fry the onions on medium flame.
2.Add spices (caraway seeds,cloves,cubeb seeds, black pepper, cinnamon sticks,green cardamom) mix well until the colour of onions changes to light brown.
3.Add ginger garlic paste 4-3 tsp, add salt, black pepper powder,turmeric powder
4.Add 1kg Mutton.
5.mix well
6.Add 3 to 4 glasses of water.
7.close the lid until it gives 7-9 whistles
8.You can check your dish in between by turning the flame off if the mutton is not cooked in an appropriate way then repeat the process until 4-5 whistles.
9.Grind all the dryfruits(almonds,cashews, walnuts,pistachios)in a jar.
10.once the mutton is cooked add the grinded dryfruits stir well to avoid lumps add 3-4 glasses of water maintain the consistency of the liquid note: liquid should not be too thin or too thick close the lid until it gives 2-3 whistles.
11. let it cook on a low flame for 10 minutes.
12. hyderabadi mutton maragh is ready to eat you can serve it with garlic bread/tandoori garlic chapati/ Naan roti/normal chapati 😃
