Huge batch of pizza dough without a mixer!

I have been researching making pizza dough like they did in the 'old country' and I found some pictures and some descriptions, but not really a good video showing more or less how it can be done in large batches.
I make a TON of pizza on the Kettle Pizza and we often host parties where we cook 20, 30 or more pizzas. I needed to make 36 pizza doughs for The American Royal this year and doing it onesy twosey with the Kitchen Aid mixer would have taken me many hours. Probably 5-6.
So, I developed this method of doing it all in one fell swoop and, while it was A LOT of work, it sure did save me a ton of time! From start to finish, including cleanup, this took me 1 hour.
Note: The 'poolish' you see in the video is kind of my 'secret sauce'. It's essentially 50% flour and 50% water, pre-fermented so the dough has some spring to it right away. You can see the measurements in the video. If you want to do this quantity, just split the poolish grams in half and add that much in flour and water respectively to the rest of the batch.
Also, a food scale is imperative. I usually use it for each individual dough, but uniformity wasn't really important to me with this batch. It was all about speed of completion. This is why you see me 'eye ball' the 36 dough balls with my cutter.
It worked great! Just like it would have if it was done with a bread mixer or my kitchen aid!!!
