Roasted Chicken with potatoes, onions and olives on the Grill Dome. A friend posted a photo from Pinterest showing a roasted chicken using a bundt cake pan. I thought it looked awesome but decided an angel food cake pan would work better.
Ingredients:
4lb roasting chicken
1 1/2 pounds red potatoes, skin on
1 large sweet onion, roughly chopped
2 c medium black olives
olive oil
Seasoning mix:
2 tbls kosher salt
1 tbls fresh ground black pepper
1 tsp paprika
olive wood smoking chips (optional)
1 angel food cake pan
