This is how we train our up and coming chefs on the art of the wok. Here they learn technique, timing and heat control.
I was contemplating editing this video but decided to keep it in its raw form as I feel it would take away the experience that you are about to watch.
Here is our Partner & Executive Chef Koji Zenimaru at Ramen Isshin training our staff in the art of the wok. The wok is very important to our Ramen shop as it is the basis for our Red Miso Ramen as every bowl starts in the wok. It is very important to us that our staff be fully trained in this technique because we feel that Ramen from the wok melds all the flavours in a way that cannot be recreated in a frying pan or pot.

How he uses the ladle to control the rice
Sound, the music he makes with the wok to entice the customers, this is a very deliberate trick, he is putting on a show for them
