This easy Australian fruit cake recipe is not my own and I think I may have sourced it from a women's association recipe many years ago.
It is commonly called a Boiled Pineapple Fruit Cake because you boil the fruit, rather than soak it.
You will find this recipe at multiple sources and it does not really vary as it is a classic that just works and it relatively quick to make.

📝 ** THE RECIPE ** 📝

Crushed Pineapple - 1 X 440g can. (2 cups is OK)
Mixed Fruit - 500g. (2 cups)
Plain Flour - 1 cup.
Self Raising Flour - 1 cup.
Brown Sugar - 1 cup.
Salted Butter - 125g. (1/2 cup)
Vanilla Extract - 1 tsp.
Eggs - 2 (beaten).
Mixed Spice - 1tsp ( Pumpkin Spice could be used.)
Bicarb Soda - 1tsp.
Optional Sherry, Brandy, booze of your choice - 1-2 Tbsp.
Optional extra pineapple juice to brush on top at the end.

🧑‍🍳 - When I "boil" for 10 minutes, it is more of a fast simmer, so the liquid does not evaporate. Keeping the lid on is a must.

🧑‍🍳 - Freezes well. Just wrap in cling wrap and freeze. I find it more moist after freezing.

🧑‍🍳 - Do not drain the pineapple. The recipe needs the juice.
