Hey everybody.
In this video I restore a japanese kitchen knife. The shape and thickness I would say it is a usuba knife. Mainly this knife is used in the kitchen for vegetables. I received it from a restaurant. In the restaurant, it was used for more than 30 years, until the tang of the knife has rusted off. So once again I try to go from trash to treasure.
I start the restoration of the japanese knife by removing the rust. First with the wire brush and then with electrolysis. Then I weld on a new tang When welding, I put point over point and always check the temperature, because the knife itself must not get hot, because otherwise it loses the hardening.
After welding, I file the weld smooth and grind the knife from 120 to grit size 3000.
I then make the new handle from two types of wood: bloodwood and ebony. Two wonderfully hard and colorful woods that create a dramatic overall look. It is important to me that the handle reflects the aggressiveness of the shape of the blade.
Since the two hardwoods are very difficult to shape, I decide to make a traditional Wa-Handle. This takes the tang in the core in a piece of softwood, which is glued into the hardwood. The softwood can be perfectly fitted to the tang using a special burning technique.
I enhance the intesive color combination of the handle with stainless steel spacers and an exciting grinding of the handle. I finish the handle with linseed oil and join the handle and tang.
In the end I grind it razor sharp and of course test it.
This time I test a "Laacher Klosterbier" a beer which is a little too bitter for my taste and rather narrow in the bandwidth of the taste.
