How to make Finnish Archipelago Bread – Saaristolaisleipä
Ingredients:
500 ml buttermilk
1 package yeast
220 g molasses
5 g salt
30 g wheat bran
120 g brown malt
90 g rye flour
350 g AP flour
20 g molasses and 35 g water for brushing loaves during bake
Brown malt can be purchased at: www.finngoods.com
Directions:
Add dry ingredients to bowl and mix
Warm buttermilk in a saucepan until lukewarm
Add molasses and yeast to buttermilk and mix
Add buttermilk mixture to dry ingredients - combine, no knead, just until everything is combined
Let rise 90 minutes-two hours
Add mix to bread pan(s)
Let rise 90 minutes
They cook at 350 F for two hours in lower half of oven.
With 30 minutes remaining, brush molasses/water mix over bread and then back in oven for 30 minutes
Once done let cool on rack.
