Hi guys and welcome back, If you are new here welcome my name is EYA, today I will be sharing with you how to make Tunisian Klaya and bread for EID al ADHA
1- Semolina Bread :
300 gr of fine semolina (1.8 Cup)
300 gr of flour (2 cup)
115 ml olive oil (0.5 cup)
1+ 1/2 Tablespoon of Dry yeast
1/2 Tablespoon of sugar
1 + 1/2 Teaspoon of salt
320 ml of warm water (more or less depending on the flour / semolina)
1- First rising of the dough 1h
2- Second dough rising after having formed the bread 20 / 25mn or more if it is cold
3- Bake in a preheated oven at 350°F / 180°C for 20 to 25 minutes depending on the oven, bread must be golden

2- For the Kleya (braised meat)
400 gr of center cut lamb steak
1 Lamb heart
2 lamb kidney
1/2 lamb liver
(Please note all quantity above are here just to give you an Ides on what i used but you can add more or less depending on your taste, if you want to make it meat only just use around 800gr of meat to 1 kg)
1 onion finely shopped
olive oil
1 tsp of salt
1/2 tsp of black pepper
water
