✨ Ropa Vieja
Ingredients:
• 2–2.5 lbs flank steak (or chuck)
• 1 onion (sliced)
• 1 red + 1 green bell pepper (sliced)
• 4–5 garlic cloves
• 1½ tsp cumin
• 1 tsp smoked paprika
• 1 tsp oregano
• 1 bay leaf
• 1 cup tomato sauce
• 1 cup beef stock
• Salt + pepper
Slow Cooker:
1. Sear beef; place in slow cooker with onions, peppers, garlic, spices, tomato sauce, stock, wine.
2. Cook Low 8 hrs or High 4–5 hrs.
3. Shred beef; stir in olives + capers; simmer uncovered 10 min to thicken.
✨ Garlic Confit Mashed Potatoes
Ingredients:
• 3 lbs Yukon Gold potatoes
• 4–6 tbsp butter (or ghee)
• ½–¾ cup warm milk or broth
• Salt + pepper
• Garlic confit: peeled garlic cloves + olive oil to cover + pinch salt (+ herbs optional)
Instructions:
1. Garlic confit: Simmer garlic in olive oil on very low 30–45 min until soft.
2. Potatoes: Boil potato chunks in salted water 15 min; drain.
3. Mash with butter, 6–10 confit cloves, warm milk/broth, and a spoon of confit oil.
4. Season to taste.
✨ Classic Cranberry Sauce
Ingredients:
• 12 oz cranberries
• ½ cup OJ
• ½ cup water
• ½–⅔ cup sugar or maple syrup
• Orange zest + pinch salt
• Optional: cinnamon, vanilla, ginger
Instructions:
1. Combine all ingredients in saucepan.
2. Simmer 10–12 min until berries burst + thicken.
3. Cool — thickens as it sits.
✨ Gluten-Free Baked Mac & Cheese
Ingredients:
• 12 oz GF pasta
• Breadcrumb topping: 1 cup GF breadcrumbs + 2–3 tbsp butter/oil + garlic powder + paprika + salt
• Cheese sauce:
• 4 tbsp butter
• 4 tbsp GF flour
• 3 cups milk
• 2–3 cups shredded cheddar (plus mozzarella/gruyère optional)
• Dijon, garlic powder, onion powder, salt, pepper
Instructions:
1. Cook pasta slightly underdone.
2. Toast breadcrumbs in butter/oil with seasonings.
3. Make roux with butter + GF flour; whisk in milk; melt in cheeses + seasonings.
4. Stir pasta into sauce; transfer to dish; top with breadcrumbs.
5. Bake at 375°F for 15–20 min.
