Hot Honey Garlic Chicken with Golden Jasmine Rice & Pickled Onions!

Ingredients
For The Chicken
• 1,200 g boneless, skinless chicken thighs, cut into 1–1½ inch cubes
• 1½ tsp salt
• 1½ tsp black pepper
• 2 tsp smoked paprika
• 2 tsp garlic powder
• 2 tsp onion powder
• 1 tsp ground cinnamon
• 1½ tsp ground coriander
• 4 cloves garlic, finely minced
• 3 tsp olive oil
• 100 g plain Greek yogurt
• 35 g hot honey
For The Pickled Onions
• 400 g red onion, thinly sliced
• 1 whole lemon, juiced
• 2 tbsp red wine vinegar (or apple cider vinegar)
• ¾ tsp salt
• ½ tsp ground coriander (optional)
• ¼ tsp smoked paprika
• Big handful fresh parsley, finely chopped
For The Golden Jasmine Rice
• 1½ cups (300 g) uncooked jasmine long-grain rice
• 20 g butter
• ½–¾ tsp turmeric
• ½ tsp salt
• ½ tsp smoked paprika
• 1 tbsp fresh parsley, chopped
For The Glaze
• 4 tbsp hot honey
• 4 tbsp water or low-sodium chicken stock
• 1–2 tsp lemon juice or apple cider vinegar
Portioning (5 Containers)
Per Container
• Chicken: ~180 g cooked
• Rice: ~¾–1 cup cooked (≈ 170–180 g)
• Pickled onions: ~80 g (about ⅓ cup)
Optional when serving:
• 1–2 tbsp plain Greek yogurt
