INGREDIENTS:

500 grams Bowtie pasta
300 grams Shrimp, season with salt and pepper
1 cup button mushroom, sliced
1 cup grated cheddar cheese
1 cup milk
2 cups cream
1 medium size onion, minced
5 cloves garlic, minced
3 tbsp olive oil
1 tbsp flour
1/2 cup + 2 tbsp unsalted butter
1 tbsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp nutmeg
2 tsp salt (according to taste)
1 tsp pepper
1 tsp brown sugar
1 tsp extra hot Peri-peri sauce (according to taste)

DIRECTIONS:
1. Heat pan over medium heat. Add 3 tbsp olive oil and 1 tbsp butter then add the shrimp and fry until both sides turn pink. Add butter if necessary. Once cooked, remove from pan and set aside.
2. Making the Bechamel sauce:
In the same pan, add 1 tbsp butter, 1 tbsp flour. Continue stirring as the flour cooks to a light, golden, sandy color.
3. Add milk slowly, stir until no lumps and the sauce is smooth and simmer until slightly thickens.
4. Add the rest of the cream, cooked mushroom, and half of shrimp (reserve half for garnish)
5. Add nutmeg, onion powder, garlic powder, paprika, and 1 tsp Peri-peri sauce. (according to taste)
6. Add grated cheddar cheese, salt and pepper and a pinch of thyme.
