Homemade Marshmallows:
1. Combine 1 cup of filtered water and ½ cup of Gelatin in a mixing bowl and let it sit to bloom (just let the water absorb the gelatin, unstirred) while you heat the other ingredients.
2. Combine 3/4 cup of water, 350g honey, splash of vanilla, and pinch of salt in a pot over medium heat on the stove, and stir to combine. (Do not let it come to a boil.)
This is when you'd want to line a pan with parchment paper because after the mixture has been whipped, it becomes stiff fairly quickly.
3. Start mixing gelatin on low in the mixer and slowly pour in the honey mixture.
4. Gradually increase to high speed and mix for about 10 minutes or until it looks mallowy.
5. Quickly scoop into a parchment lined pan and let them sit for a few hours, then cut into squares.
Optional: brush them with arrowroot powder to prevent them from sticking together.

Brown Sugar Cardamom Cookies:
INGREDIENTS:
2 cups almond flour
3/4 cup Brown Swerve
2 tsp ground cardamom 1/2 tsp cinnamon
1/2 tsp baking soda 1/4 tsp salt
1 large egg
1/2 cup butter, melted and cooled 1/2 tsp vanilla extract
1/3 cup sugar-free white chocolate chips
DIRECTIONS:
Preheat the oven to 325°F and line a large sheet with a silicone baking mat or parchment paper.
Whisk together the almond flour, Brown Swerve, cardamom, cinnamon, baking soda, and salt in a large bowl.
Stir in the butter, egg, and vanilla extract until the dough comes together. Stir in the white chocolate chips. Roll into 1-inch balls.
Press the balls down to about 3/4 inch thick with the palm of your hand. Don't press down too much, as these cookies will spread on their own.
Bake 15-18 minutes, until puffed and golden brown around the edges. They will still be very soft. Remove from the oven and let cool completely on the pan.
