Sauté with Snare - Sous Vide Trip Tip, Aloo ki Bhujia, and Beurre Fondue Asparagus

From 8/31/23 -- Tri tip is one of my all time favorite cuts of beef. When grilled well, it's flavorful, moist, and tender. Unfortunatly, I can't grill and stream at the same time. So we're going to try something.
I got this tri tip in a hatch chile marinade from the store, and that alone intrigued me, that I thought I'd try the sous vide method with. This does take a long time (about 6 hours), so it's already cooking, but I can finish it on stream.
The curry potatoes are another Instagram find from @zaynahsbakes. This is apparently meant as a main dish served with naan, but whatevs. This will work great as a side.
The veggies are inpired from a tip I read of how to finish them like a restraunt might do. Beurre fondue is just butter and a bit of water. The veg can be whatever you like, so go crazy.
Here's the recipe!
Tri Tip
-A tri tip
-Salt
-Pepper
-In this case, a hatch chili marinade. Otherwise, Worcestershire sauce
Vegetables
-The vegetable you want to eat. I'm going to do asaparagus.
-Butter
-A bit of water
-Salt
-Pepper
Curried Potatoes (Aloo ki Bhujia)
-2.5 pounds waxy potatoes (I'm using Yukon Golds)
-2 red onions
-6 garlic cloves
-2 teaspoon cumin seeds
-1 teaspoon mustard seeds
-4 teaspoon chili powder
-2 Tablespoon Garam Masala
-1 can chopped tomatoes
