Episode 11: Semi- Homemade Cooking
Chicken and Mushroom Ravioli
Ingredients:
2 bags MUSHROOM RAVIOLI (Trader Joe’s)
1-8 oz package of fresh whole CREMINI MUSHROOMS
4 tablespoons CAPERS
1 12 oz. pkg. fresh Haricots Verts GREEN BEANS (Trader Joe’s)
2 cups CHICKEN BROTH (you may not need all of it)
1 pkg. or 4 CHICKEN BREAST
BUTTER to season green beans
OLIVE OIL to grill chicken
SALT
PEPPER
Granulated GARLIC
LEMON PEPPER
PAPRIKA
Seasoned SALT
Directions:
1. Season chicken breast with garlic, lemon pepper, paprika, and seasoned salt. You may also use your favorite spices to season the chicken.
2. Heat a skillet with olive oil or oil of your choice. Brown chicken breast on each side.
3. Place 1 cup of chicken broth in a pot along with washed green beans and boil until tender. You may also steam them. Or, follow the directions on the package.
4. Strain liquid from the green beans and season with lemon pepper or lemon juice and butter.
5. Clean and slice the cremini mushrooms. You can buy a bag of already sliced mushrooms to save time.
6. Add Mushroom Ravioli to a skillet along with the sliced fresh mushrooms and follow the directions on the package. Use the other 1 cup of chicken broth to thin the gravy if needed or if the sauce looks too thick.
7. Add the capers to the ravioli once the gravy has melted and ravioli is heated.
8. Plate the chicken, ravioli and green beans.
9. Enjoy!
