Strawberry Cheesecake Bars

Ingredients:

1 3/4 cups of Strawberries
1/2 tablespoon of freshly squeezed Lemon juice
2 Eggs
2 8 oz packs of Cream Cheese
1/4 cup of Sour Cream
1/2 cup of melted Unsalted Butter
2 teaspoons of Vanilla Extract
1 pack of Graham Crackers
1 cup of Granulated Sugar
2 teaspoons of Corn Starch
White Chocolate

Instructions:

1. Dice 1 3/4 cups of strawberries.
2. Slice 1 lemon in half (This will be used later for the lemon juice).
3. In a ziploc bag, mash 1 pack of graham crackers into crumbs.
4. In a bowl, add 1 1/2 cups of graham cracker crumbs and a 1/2 cup of melted unsalted butter. Mix.
5. In a 9x9 pan, add graham cracker crumbs and firmly press down until the bottom of the pan is covered.
6. In a bowl, add 2 8 oz blocks of cream cheese, 1 cup of sugar, 1/4 cup of sour cream, and 2 teaspoons of vanilla extract. Mix until smooth.
7. Mix in 2 eggs, separately.
8. Pour cheesecake mixture over graham cracker crust. Smooth out the mixture.
9. Bake at 350 degrees for 45 minutes.
10. Allow cheesecake to cool for 3 hours.
11. Remove the edges of the cheesecake.
12. Melt white chocolate (according to package).
12. Cut the cheesecake into 8 bars.
13. In a skillet, add 1 3/4 strawberries, 3 tablespoons of water, 1/2 tablespoon of lemon juice, and 2 tablespoons of cornstarch.
14. Add 5 tablespoons of sugar.
15. Simmer on a medium heat for 10 minutes.
16. Allow strawberry compote to cool for 10 minutes.
17. Top cheesecake with strawberry compote and drizzle white chocolate over it.
18. Enjoy.
