SWEET POTATO TOAST w/ Avocado & Cilantro Chipotle Cashew Sauce 🍠🥑It’s the perfect bite packed with so much flavor! Bye bye bread and hello to sweet potato! VEGAN, VEGETARIAN & GLUTEN-FREE.
I think this is the new recipe to add to your weekly rotation as it is mine.😋
1 sweet potato (peeled, or if not peeled, clean and wash really well)
1 tsp paprika
1 tbsp onion powder or garlic powder
1 tsp salt
2 tbsp olive oil
*massage the sweet potato slices (1 inch thick) well then spread out with space in between on a lined baking sheet and bake for 425 degrees F for 25-30 minutes until golden brown.
Sauce:
1 cup fresh cilantro
1-2 chipotle peppers from a can (add more depending on spiciness level)
1/2 lemon, fresh squeezed
1/4 tsp salt
1 garlic clove
1/4 cup olive oil
3 tbsp water (for thinner consistency)
1/4 cup cashews (roasted or raw)
Toppings:
Sliced avocado
Micro greens or green onion
