Made with ground chickpeas and fava beans (broad beans), fresh herbs, onions, garlic and spices. These crispy fritters are vegan-friendly and a delicious snack on their own or when put in a wrap. Full recipe details below.

INGREDIENTS
Makes 12-15 Falafels (half mix) | Serves 4-6 | Time 50m
For Falafels;
▪︎ 3 cups dried chickpeas
▪︎ 1 cup split broad beans(fava beans) - optional
▪︎ 1 handful of fresh parsley
▪︎ small bunch of fresh coriander
▪︎ 1 medium onion
▪︎ 4 cloves of garlic
▪︎ spices - 1 tbsp falafel spices (optional), 2 tsp ground coriander, 2 tsp ground cumin, 1 tsp black pepper, 1tsp salt, 1 tsp chilli paste/ground chilli
▪︎ ¼ tsp baking powder
To make Falafels;
1. Soak dried chickpeas and split broad beans overnight. Cover them generously with cold water. They should double in size.
2. Wash and de-stem the fresh parsley and coriander. Peel garlic cloves and roughly chop onion.
3. Add parsley, coriander, onion, garlic, chickpeas and broad beans to food processor. Blitz the mixture a little at a time until crumbly texture forms.
4. Blitz any remaining chickpeas/beans.
5. Empty mixture into a bowl, add all the spices and combine well [Separate half the mix for freezing].
6. 15mins before frying, add baking powder and sesame seeds (optional). Cover and refrigerate.
7. Use falafel scoop or form falafel mix into balls.
8. Deep fry in medium-hot oil, until golden brown on both sides.
For Tahini sauce;
▪︎ 3-4tbsp tahina paste
▪︎ 1 tbsp lemon juice, 1 tsp salt
▪︎ 1/4 cup warm water (plus more if needed)
1. In a bowl, combine ingredients and mix well. Add more water if needed.
