🥣 파개장 만들기
재료 : 대파 5대, 표고버섯 4개, 팽이버섯 1개
양념 : 고춧가루 4T, 국간장 2T, 다진 마늘 3T, 물 50ml, 진한 멸치육수 1L
1. 대파, 팽이버섯 5cm 길이로 썰고
2. 표고버섯 얇게 채 썰어요
3. 냄비에 고춧가루 4T, 국간장 2T, 다진 마늘 3T, 물 50ml 넣고 중강불에서 타지 않도록 볶아요
4. 진한 멸치육수 1L 넣고 팔팔 끓으면
5. 대파, 팽이버섯, 표고버섯 넣고 강불에서 한소끔 끓여요
6. 마지막으로 후추를 뿌리면 완성

🥣 Korean Spicy Scallion Soup (Pagaejang)
Ingredients:
5 large Korean scallions (daepa)
4 shiitake mushrooms
1 pack enoki mushrooms
Seasoning Base:
4 tablespoons Korean red pepper flakes (gochugaru)
2 tablespoons soup soy sauce (guk-ganjang)
3 tablespoons minced garlic
50ml water
1 liter rich anchovy broth
Instructions
1. First, prep your vegetables. Cut the scallions into 5cm (2 inch) pieces. Slice the shiitake mushrooms thinly, and trim the enoki mushrooms to a similar length.
2. In a large pot, combine the gochugaru (Korean red pepper flakes), soup soy sauce, minced garlic, and 50ml of water. Stir-fry this mixture over medium-high heat. Be careful not to burn the chili flakes—just gently bring out the aroma.
3. Once the mixture is fragrant, pour in 1 liter of anchovy broth and bring it to a rolling boil.
4. Add all the prepared vegetables to the boiling broth: scallions, shiitake mushrooms, and enoki mushrooms. Turn the heat to high and let it boil for a few more minutes until the scallions soften and the flavors meld.
5. Finish with a pinch of black pepper to your taste. That’s it—your light, spicy, and comforting pagaejang is ready to enjoy!
Tips
This dish is a lighter version of yukgaejang, made without meat. It’s clean, refreshing, and full of deep umami flavor.
If the broth tastes too salty, add a bit more water and simmer briefly.
If it’s too mild for your taste, season lightly with salt before serving.
