16 SLICES / 2 POUNDS
1½ cups water, at 80°F to 90°F
2 tablespoons honey
2 tablespoons melted butter, cooled
1 teaspoon salt
3¼ cups whole-wheat flour
1 cup white bread flour
. 1 packet instant yeast
Mix in a mixer until dough forms a nice smooth ball and pulls away from the sides. Remove and round up . Place in a covered bow to double in size. Form loaf and let rise again until doubled . Score and bake at 400° for 20 minutes covered and 20 minutes uncovered or until the internal temperature is at 210°.
