Today we are making a delicious, moist, sticky caramel apple cake. Perfect all year round but especially when Bramley or other cooking apples are in season (September - November in the UK). Conference pears also work in this recipe if you prefer.
You can freeze this cake before putting the caramel topping on (just let it cool fully first, wrap it in film and foil and defrost thoroughly before serving)
If you can’t find Carnation caramel sauce or Dulce de Leche then you can make it from a can of sweetened condensed milk and just a pan of boiling water! see this video • How to make Caramel in a Can
INGREDIENTS
• 125g unsalted butter, softened (plus some to grease the tin)
• small can of Carnation caramel / dulce de leche or similar
• 2 medium eggs
• 225g self raising flour
• 2tsp baking powder
• 2tsp ground cinnamon
• 300g Bradley apples, peeled cored and diced
• 2tbsp milk
• approx 1 tbsp Demerara sugar
