Today we’re making Down-the-Bayou Stadium Nachos — inspired by classic college football nachos, but built with real Gulf Coast flavor. Crispy tortilla chips, melted cheddar, crumbled boudin sausage, and a smooth white queso finished with crema, green sauce, and sweet pickled jalapeños.
These are perfect for college football playoff games, bowl season, or any game-day watch party when you want something familiar, messy, and just a little elevated.
No strict measurements here — this recipe is about process over precision:
1. Layer the chips
2. Melt the cheese and pour on Queso
3. Add the boudin
4. Watch the oven
5. Finish strong
Don’t have boudin? mix leftover rice, ground pork (with a little liver in it), and seasonings in a skillet.
No pepper jack? Cheddar works just fine.
