📒Homemade Chicken Pesto Pizza Recipe📒
Have you ever used pesto as pizza sauce? In this video from Food Talks, you will learn the best chicken pesto pizza recipe, with an easy homemade pesto recipe in bonus. This pesto pizza could be a great appetizer, served cut into small slices, or it could also be a perfect main dish, sided with a fresh salad. We cooked our pesto pizza in the Roccbox portable pizza oven, but you can achieve great results in the regular home oven.

Instructions for conventional oven:
Preheat a pizza stone/steel for 30-40 minutes at the max temperature your oven can reach (not broil). Cook the pizza crust with only some pesto sauce and cherry tomatoes, for about 5 minutes. Remove the pizza from the oven, add some more pesto, chicken pieces, mozzarella cheese, and a drizzle of olive oil, and cook for only 2 more minutes, until the cheese is melted.


Ingredient for the pesto:
½ cup pine nuts, grilled
2 cups fresh basil leaves
2 garlic cloves
¼ cup canola oil
¼ cup olive oil
⅓ cup parmesan cheese, grated
Juice of 1 lemon
Salt & pepper

Chicken pesto pizza ingredients (for 2 pizzas):

All the homemade pesto from the recipe above (divide it in 2 equal shares)
12-16 Cherry tomatoes, cut in half
2 chicken breasts, skinless & boneless
Mozzarella cheese for pizza
Olive oil to drizzle


Instructions:
Put all ingredients for the pesto sauce in the food processor, and blend until you get a smooth and creamy texture.
Grill chicken breasts with salt and pepper, on medium fire, for about 10-15 minutes, until they’re cooked through.
Spread pizza dough, by hand for a fluffy crust, or with the rolling pin for a thin and crispy crust.
Spread half of the pesto sauce on the pizza base, add cherry tomato pieces, chicken pieces, mozzarella cheese, and drizzle olive oil.
