The dusty former meatpacking plant in the Back of the Yards neighborhood was hardly “food grade” in March when Nick Greens moved in. But in a 300-square-foot space only slightly larger than a cubbyhole, the South Side native has fostered a thriving “micro” plants business.
“You had layers of dust. I washed all the walls by hand,” says Mr. Greens, who says he spent about $4,000 to rehab the space. “We had to seal the wood. There were a lot of things we had to do to pass code. It took me months.”
