One of the most famous places in Rome to try ‘pizza al taglio’ is Pizzarium created and owned by Gabrielle Bonc a renown Italian chef personality. To avoid crowds get there late in the evening. Once you arrive take your ticket and get in line. Watch the display as it’s continuously changing with pizzas arriving AND DISAPPEARING all the time. At the top there’s a list of the famous “fried balls with rice or pasta” but we are here for the pizza. The obvious one to try is the classic pizzetta rossa. My best one was the one on the right with aubergine, courgette, thinly sliced potatoes and sweet onions.
Be prepared to most likely take more than you can handle and pay more than expected but you can always take the rest home and have it next day at the airport. Cold but still tastes good.
