Here is a simple and authentic Vada Pav recipe 👇
(Street-style, vegetarian)
🌮 Vada Pav Recipe (Mumbai Style)
🥔 Ingredients
For Batata Vada:
4 boiled potatoes (mashed)
1 small onion (finely chopped)
2 green chilies (crushed)
1 tsp ginger-garlic paste
½ tsp mustard seeds
8–10 curry leaves
¼ tsp turmeric powder
Salt to taste
2 tbsp oil
Fresh coriander (chopped)
Lemon juice (optional)
For Besan Batter:
1 cup besan (gram flour)
¼ tsp turmeric
Salt to taste
A pinch of baking soda
Water (as needed)
Other:
Pav buns
Oil for deep frying
🌶️ Chutneys (optional but recommended)
Green chutney (coriander + mint)
Dry garlic chutney (lasun chutney)
Tamarind chutney (optional)
👩🍳 Method
1️⃣ Prepare Potato Filling
Heat oil in a pan.
Add mustard seeds; let them crackle.
Add curry leaves, green chilies, ginger-garlic paste.
Add onion and sauté lightly.
Add turmeric, salt, and mashed potatoes.
Mix well, add coriander and lemon juice.
Switch off gas and let mixture cool.
Make lemon-sized balls.
2️⃣ Prepare Batter
Mix besan, turmeric, salt, baking soda.
Add water gradually to make smooth, thick batter.
3️⃣ Fry Vadas
Heat oil on medium flame.
Dip potato balls in batter.
Deep fry until golden and crisp.
Remove and drain excess oil.
4️⃣ Assemble Vada Pav
Slit pav slightly.
Apply green chutney and garlic chutney.
Place one hot vada inside.
Serve with fried green chili.
