(Serves 2–3 people)

2 cups cooked rice (preferably leftover or cooled)

2 tbsp oil or ghee

1 tsp cumin seeds

1 medium onion (finely chopped)

1 tomato (chopped)

1 green chili (optional, slit or chopped)

1 tsp ginger-garlic paste

½ cup mixed vegetables (carrot, peas, capsicum, corn — optional)

½ tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

½ tsp garam masala

Salt to taste

Fresh coriander leaves (chopped, for garnish)

½ lemon (optional, for tang)

🍳 Method

1. Heat oil in a pan or kadhai.
Add cumin seeds and let them splutter.


2. Add onion and sauté until light golden.


3. Add ginger-garlic paste and green chili; sauté until the raw smell goes away.


4. Add tomato and cook until soft and mushy.


5. Mix in turmeric, chili powder, coriander powder, and salt.
(You can add chopped vegetables at this stage and cook until tender.)


6. Add the cooked rice, gently mixing so the grains don’t break.


7. Sprinkle garam masala and adjust seasoning.


8. Stir well on low flame for 2–3 minutes to let the flavors blend.


9. Turn off the heat, garnish with fresh coriander and a squeeze of lemon juice.
