Celiac disease is an autoimmune gastrointestinal disorder that causes damage/destruction/injury to the gastrointestinal mucosa, leading to issues with absorption (malabsorption). Due to this underlying pathophysiological mechanism, celiac disease can cause a wide variety of vitamin/nutrient deficiencies and a very long list of signs and symptoms. In this lesson, we discuss these vitamin and nutrient deficiencies and also describe why many signs and symptoms occur.
