Goan Mutton Xacuti Recipe | Mutton Masala Curry in Goan style | Goan Shagoti
Ingredients:
For Green Paste:
} 1 Cup Fresh Coriander
} 12-15 small Garlic Cloves
} 2 inch Ginger
} 2 Green Chillies (Mild Spicy)
Dry Spices:
} 8-10 Dry Red Chilies (3-4 Kashmiri, 5-6 Button Chillies)
} 2 tblspns Coriander Seeds
} 6-8 Cloves
} 1 tspn Black Pepper Corns
} 2 inch Cinnamon
} 2 cm. nutmeg
} 1 tspn Fennel Seeds
} 1/2 Mace
} 2 tiny Bay leaves (or 1 small Bay leaf)
} 2 Green Cardamom
} 1 tspn Cumin Seeds
} 4 petals of Star Anise (de-seeded)
} 1 tspn Poppy Seeds
Other ingredients:
} 1 Kg Mutton
} 1 & 1/2 Cup Freshly Grated Coconut
} 2 Medium Size onions (Sliced)
} 1 Small Onion (chopped)
} 1 Small Tomato (chopped)
} 3 tblspns Oil
} 1 & 1/2 tspn turmeric powder
} 4-5 small Garlic Cloves
} 1 inch Ginger
} Coriander to garnish
} Salt
Method:
} Marinate Mutton with Salt, turmeric powder & green paste for atleast an hour. If possible, marinate overnight in the refrigerator.
} Dry roast all the dry spices. Roast chillies first, then the rest of the spices, roast poppy seeds towards the end.
} Grind all the roasted ingredients with some water into a smooth paste.
} In 2 tblspns of Oil, roast ginger, garlic & sliced onions until they turn brown.
} Add coconut & roast it till it turns golden brown. Add turmeric powder, mix well & let it completely cool down.
} In a tblspn of oil, roast chopped onion for 2-3 minutes. Add chopped tomatoes, salt and let the tomatoes cook until soft.
} Add marinated mutton, mix well, cover & let mutton cook on a low flame for an hour. Keep stirring after every 10-15 minutes to make sure it cooks evenly.
} Once mutton is well cooked, add the ground masala, some water for a medium thick consistency gravy, cover & let it simmer for 10 minutes.
} Garnish with Coriander & enjoy with hot rice or poie.
