Moong Dal Halwa Recipe
A classic, melt-in-the-mouth Indian dessert made with split yellow lentils, ghee, and sugar. Perfect for festivals and special occasions!
Ingredients
Yellow Moong Dal: 1 cup (soaked for 4–6 hours)
Ghee (Clarified Butter): 1 cup
Sugar: 1 cup (adjust to taste)
Milk or Water: 1 to 2 cups
Semolina (Sooji) 2 spoon
Cardamom Powder: ½ tsp
Dry Fruits: Chopped almonds, cashews, and pistachios for garnish
Step-by-Step Process
Preparation: Wash the moong dal thoroughly and soak it for 4–5 hours. Drain completely and grind it into a coarse paste without adding much water.
Roasting Nuts: Heat a little ghee in a heavy-bottomed pan and fry the chopped dry fruits until golden. Set them aside.
Cooking the Dal: Add the remaining ghee to the same pan. If using, add sooji.

The "Bhuna" Process: Cook the paste on low heat, stirring continuously to prevent lumps. Roast until the dal turns golden brown, smells aromatic, and the ghee starts to separate (this takes patience!).
Adding Liquids: Gradually pour in warm milk or a sugar-water syrup while stirring constantly to ensure a smooth texture.
Sweetening: Once the liquid is absorbed, add the sugar, saffron milk, and cardamom powder. The halwa will turn thin again as the sugar melts.
Final Touch: Continue cooking until the halwa thickens and begins to leave the sides of the pan.
Garnish: Mix in the roasted dry fruits and serve hot.
