Today, Mama Marilyn and I, switched things up with a healthy Thanksgiving feast. Our Thanksgiving dinner is low-sodium and gluten-free. We also lowered the cholesterol and replaced white sugar with sugar substitutes
The end result was a delicious and familiar dinner without compromised flavor.

Recipes:
Gluten-Free Cornbread
Ingredients:
1 cup gluten-free cornmeal
1 cup gluten-free all-purpose flour blend (ensure it has xanthan gum, or add 1/2 tsp if the mix doesn't include it)
4 tsp baking powder
1/4 cup sugar (you can adjust based on your desired sweetness)
1/2 tsp salt (omit if you're on a sodium-free diet)
1 cup milk (or a dairy-free alternative like almond or coconut milk)
1/4 cup unsalted butter, melted (or oil for dairy-free)
2 large eggs
Gluten-Free Sweet Potato Pie
Ingredients:
For the crust:
1 1/2 cups gluten-free all-purpose flour blend (ensure it has xanthan gum, or add 1/2 tsp if the mix doesn't include it)
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed (or solid coconut oil for a dairy-free version)
4-6 tbsp cold water
For the filling:
2 cups mashed sweet potatoes (about 2-3 medium-sized sweet potatoes)
1/2 cup brown sugar or granulated sugar
1/4 cup unsalted butter, melted (or coconut oil)
2 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 cup evaporated milk (or a dairy-free alternative like coconut milk)
Gluten-Free Pecan Pie
Ingredients:
For the crust:
1 1/4 cups gluten-free all-purpose flour blend (ensure it has xanthan gum, or add 1/2 tsp if the mix doesn't include it)
1/2 tsp salt
6 tbsp unsalted butter, cold and cubed
3-4 tbsp cold water
For the filling:
1 cup corn syrup (light or dark)
3/4 cup granulated sugar
1/4 cup unsalted butter, melted
1 tsp vanilla extract
3 large eggs, beaten
1 1/2 cups pecan halves
Gluten-Free Green Beans Almondine
Ingredients:
1 lb fresh green beans, trimmed.
1/3 cup sliced or slivered almonds.
2-3 tbsp unsalted butter or olive oil
2-3 cloves garlic, minced (optional)
Salt and pepper, to taste
Zest and juice of 1 lemon (optional for added flavor)
Fresh parsley, finely chopped (optional for garnish)
Gluten-Free Macaroni and Cheese:
Ingredients:
8 oz. gluten-free elbow macaroni or other gluten-free pasta shapes
2 cups shredded sharp cheddar cheese.
1/2 cup grated Parmesan cheese
3 cups milk (whole milk works best)
1/4 cup unsalted butter
2 1/2 tbsp gluten-free all-purpose flour
1/2 tsp black pepper
1/2 tsp salt, or to taste
Optional: 1/2 tsp smoked paprika or regular paprika for some added flavor
Gluten-Free Sweet Potatoes Casserole:
Ingredients:
• 4-5 large yams or sweet potatoes, peeled and sliced into 1/4-inch rounds
• 2 cups of Gluten Free Marshmallows
• 1/2 cup unsalted butter
• 1 cup granulated sugar
• One cup brown sugar, packed.
• 1/2 cup pure maple syrup or gluten-free corn syrup
• 2 tsp pure vanilla extract
• 1/2 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1/4 tsp salt
• Optional: 1/2 cup chopped pecans or walnuts
• Optional: Marshmallows for topping (ensure they're gluten-free)
